J.O. vs. Old Bay: Old Bay is the household name. J.O. is what the real crab houses use β coarser, heavier, more aggressive. If a house uses J.O., they're serious.
The table setup: Brown paper. No plates. Crabs get dumped directly. Bring paper towels. Wooden mallet for the claws, small knife to pry, or just bare hands.
The season: MayβOctober for Maryland blue crabs. Outside season, houses source from Gulf waters. Some (like The Point) only serve during harvest season β know what you're ordering.
The sizes: Small, medium, large, jumbo, colossal. Jumbo and colossal are worth every extra dollar β the meat yield difference is significant.
AYCE vs. by-the-dozen: All-you-can-eat ($48 at Captain James) is worth it if you eat more than a dozen. Always ask for the biggest available.
